Ingredients
2 tablespoons butter
1 small yellow onion, diced
2 celery stalks, diced
4 cloves garlic, minced
3 tablespoons all-purpose flour
4 cups chicken broth
3 cups cooked shredded chicken
1 cup heavy cream
1 cup grated Parmesan cheese
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh parsley, chopped
1 cup croutons
Instructions
1. Melt the butter in a large soup pot over medium heat.
2. Add the onion and celery, then cook for 4 to 5 minutes until softened.
3. Stir in the garlic and cook for 30 seconds until fragrant.
4. Sprinkle in the flour and stir well for 1 minute.
5. Slowly pour in the chicken broth while stirring until smooth.
6. Add the shredded chicken and Italian seasoning.
7. Bring the soup to a gentle simmer and cook for 10 to 15 minutes.
8. Reduce the heat to low and stir in the heavy cream.
9. Add the Parmesan cheese a little at a time, stirring until melted.
10. Season with salt and black pepper.
11. Stir in the fresh parsley.
12. Serve hot with croutons on top.
Notes
Use freshly grated Parmesan for the smoothest texture and best flavor.
Add the cream and cheese over low heat so the soup stays silky and does not separate.
If the soup thickens too much after storing, stir in a splash of broth while reheating.
