Ingredients
2 large chicken breasts, sliced in half
1 cup panko breadcrumbs
3/4 cup freshly grated Parmesan cheese
3 cloves fresh garlic, minced
2 large eggs, beaten
1/2 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil (for frying)
1 tablespoon fresh chopped parsley (optional, for garnish)
Instructions
1. Slice chicken breasts horizontally to make thinner cutlets. Pat dry and season with salt and pepper.
2. Prepare 3 shallow bowls: one with flour, one with beaten eggs, and one with a mix of panko, Parmesan, and minced garlic.
3. Dredge chicken in flour, then dip into egg, then press into breadcrumb mixture until evenly coated.
4. Heat olive oil in a skillet over medium heat. Cook chicken for 4–5 minutes per side until golden and cooked through (165°F internal temp).
5. Let rest for a few minutes before slicing. Garnish with parsley if desired.
Notes
Patting the chicken dry before seasoning helps the crust stick better.
Press the breadcrumbs firmly onto the chicken for a thick, even crust.
Reheat leftovers in the oven or air fryer to maintain crispiness.
