Ingredients

For the Salad:

4 ripe peaches, halved and pitted

4 cups fresh arugula or mixed greens

1 tablespoon olive oil (for grilling)

Salt and pepper to taste

For the Honey Mustard Dressing:

3 tablespoons Dijon mustard

2 tablespoons honey

3 tablespoons olive oil

1 tablespoon apple cider vinegar

1 teaspoon fresh lemon juice

Salt and pepper to taste

Instructions

  1. Prepare the Peaches: Preheat your grill or grill pan to medium heat. Lightly brush the peach halves with olive oil and season with salt and pepper.
  2. Grill the Peaches: Place the peach halves cut-side down on the grill. Cook for 3-4 minutes until grill marks appear. Flip and grill for another 2-3 minutes. Remove from heat and slice each half into wedges.
