Description

Ingredients

1 package 3.4 ounce instant vanilla pudding mix

1 can 20 ounce crushed pineapple with juice

1 cup sour cream or plain Greek yogurt

1 container 8 ounce whipped topping thawed

2 cups mini marshmallows

1 cup sweetened shredded coconut

1/2 cup chopped pecans or macadamia nuts optional

1/2 cup pineapple chunks for garnish

2 tablespoons toasted coconut for garnish


Instructions

1. In a large bowl, whisk together the instant vanilla pudding mix and crushed pineapple with its juice until slightly thickened.

2. Fold in the sour cream or Greek yogurt and whipped topping until smooth and fluffy.

3. Stir in the mini marshmallows, shredded coconut, and nuts if using.

4. Cover and chill for at least 1 hour until cold and set.

5. Spoon into a serving dish, top with pineapple chunks and toasted coconut, and serve chilled.

Notes
