Ingredients
6 large eggs
1/2 cup black beans (rinsed and drained)
2 cooked chicken or turkey sausages, sliced
1/2 cup diced bell peppers
1/4 cup diced onions
1/2 cup shredded cheddar cheese
2 tablespoons chopped green onions
1 tablespoon olive oil or butter
4 large whole wheat or high-protein tortillas
Instructions
- Heat olive oil or butter in a skillet over medium heat. Add bell peppers and onions, cooking until softened (about 5 minutes).
- Add sausage to the pan and cook until browned. Remove the mixture and set aside.
- In a bowl, whisk eggs with a pinch of salt. Scramble in the skillet until just set.
