Ingredients

2 1/2 cups all-purpose flour

2 1/2 teaspoons baking powder

3/4 cup unsalted butter, softened

1 3/4 cups granulated sugar

4 large eggs, room temperature

1 tablespoon vanilla extract

1 cup whole milk, room temperature

1/2 cup sour cream, room temperature

3/4 cup pastel jimmies or funfetti-style sprinkles

1 cup unsalted butter, softened

4 cups powdered sugar

2 to 3 tablespoons heavy cream or milk

2 teaspoons vanilla extract

1 pinch salt

1/2 cup pastel sprinkles

1/2 cup Easter candy-coated chocolates or pastel candy pearls


Instructions

1. Preheat the oven to 350°F and grease two 8-inch round cake pans. Line the bottoms with parchment paper.

2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

3. In a large bowl, beat the butter and sugar until light and fluffy, about 3 to 4 minutes.

4. Add the eggs one at a time, mixing well after each addition. Mix in the vanilla extract.

5. Add the dry ingredients in three additions, alternating with the milk and sour cream. Mix just until combined.

6. Fold in the pastel sprinkles gently.

7. Divide the batter evenly between the prepared pans and smooth the tops.

8. Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean or with a few soft crumbs.

9. Cool the cakes in the pans for 10 minutes, then transfer to wire racks to cool completely.

10. For the frosting, beat the butter until creamy. Add powdered sugar gradually, then mix in vanilla, salt, and enough cream to make a smooth frosting.

11. Place one cake layer on a serving plate and spread frosting on top. Add the second layer and frost the top and sides.

12. Decorate with pastel sprinkles and Easter candy-coated chocolates or candy pearls. Chill briefly before slicing if you want cleaner layers.

Notes

Use jimmies instead of nonpareils so the colors stay bright and do not bleed too much into the batter.

Make sure the cake layers are fully cool before frosting so the buttercream stays smooth and fluffy.

Chill the finished cake for 20 to 30 minutes before slicing for neater layers and cleaner presentation.
