Description

These cupcakes are the perfect blend of sweet summer peaches, creamy frosting, and delicate vanilla cake. Topped with a fresh slice of peach and a drizzle of honey, they make a beautiful treat for warm weather gatherings or a lovely anytime indulgence.


Ingredients

For the cupcakes:

1 1/2 cups all-purpose flour

1 1/2 tsp baking powder

1/4 tsp salt

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1/2 cup whole milk

For the frosting and topping:

8 oz cream cheese, softened

1 cup powdered sugar

1/2 cup heavy cream

2 fresh peaches, thinly sliced

Honey for drizzling


Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, beating well. Mix in vanilla extract.
  4. Alternate adding dry ingredients and milk into the wet mixture, beginning and ending with flour. Mix until just combined.
  5. Fill cupcake liners 2/3 full and bake for 18-22 minutes. Let cool completely.
  6. For frosting: Beat cream cheese until smooth. Add powdered sugar and beat until combined. Add heavy cream and whip until fluffy.
  7. Frost cooled cupcakes. Top each with a peach slice and drizzle with honey.
