This Lemon Herb Baked Tofu is a bright, easy recipe packed with fresh lemon, garlic, and herbs for a quick dinner, healthy snack, or meal prep favorite. Ingredients
14 ounces extra-firm tofu
2 tablespoons olive oil
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
3 cloves garlic, minced
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh basil
1 teaspoon dried oregano
1 tablespoon cornstarch
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon chopped fresh parsley for garnish
1 teaspoon fresh lemon juice for finishing
Instructions
1. Preheat the oven to 400°F and line a baking sheet or small baking dish with parchment paper.
2. Drain the tofu, wrap it in paper towels or a clean kitchen towel, and press it for 20 to 30 minutes to remove excess moisture.
3. Cut the pressed tofu into even bite-sized cubes.
4. In a medium bowl, whisk together olive oil, lemon juice, lemon zest, garlic, chopped parsley, basil, oregano, cornstarch, salt, and black pepper.
5. Add the tofu cubes to the bowl and gently toss until all pieces are evenly coated.
6. Let the tofu sit in the marinade for 10 to 15 minutes if time allows.
7. Arrange the tofu in a single layer on the prepared baking sheet.
8. Bake for 25 to 30 minutes, flipping halfway through, until the edges are golden and slightly crisp.
9. Remove from the oven and finish with extra chopped parsley and a little fresh lemon juice.
10. Serve warm with rice, quinoa, roasted vegetables, salad, or wraps.
Notes
Pressing the tofu well helps it absorb more flavor and improves the final texture.
Cornstarch helps create crispier edges, so do not skip it if you want more texture.
For the best browning, spread the tofu out so the pieces are not touching too much.
