Description

This rich and creamy Southern classic features roasted baby potatoes drenched in a savory cheese sauce, topped with crispy bacon and finished with green onions. It’s the ultimate comfort food perfect for family dinners or gatherings.


Ingredients

2 lbs baby Yukon gold or red potatoes

8 slices bacon

1 1/2 cups shredded cheddar cheese

1/2 cup sour cream

1/4 cup mayonnaise

1/4 cup chopped green onions (plus extra for garnish)

Salt and pepper, to taste


Instructions

  1. Wash and halve the baby potatoes if needed. Boil in salted water for 8 minutes.
  2. While potatoes cook, fry bacon until crisp. Drain and chop.
  3. Mix cheese, sour cream, and mayonnaise in a bowl. Season with salt and pepper.
  4. Preheat oven to 400°F (200°C). Drain potatoes and place in greased baking dish.
  5. Pour cheese sauce over potatoes and toss gently. Top with bacon.
  6. Bake uncovered for 25–30 minutes until bubbly and golden.
  7. Garnish with chopped green onions and serve warm.
