Ingredients
2 lbs baby Yukon gold or red potatoes
8 slices bacon
1 1/2 cups shredded cheddar cheese
1/2 cup sour cream
1/4 cup mayonnaise
1/4 cup chopped green onions (plus extra for garnish)
Salt and pepper, to taste
Instructions
- Wash and halve the baby potatoes if needed. Boil in salted water for 8 minutes.
- While potatoes cook, fry bacon until crisp. Drain and chop.
- Mix cheese, sour cream, and mayonnaise in a bowl. Season with salt and pepper.
- Preheat oven to 400°F (200°C). Drain potatoes and place in greased baking dish.
- Pour cheese sauce over potatoes and toss gently. Top with bacon.
- Bake uncovered for 25–30 minutes until bubbly and golden.
- Garnish with chopped green onions and serve warm.
