Description

This One Skillet Andouille Sausage Pasta is a bold, creamy, easy dinner packed with smoky sausage, tender pasta, peppers, and parmesan in one pan. Ingredients

12 ounces andouille sausage, sliced

12 ounces cavatappi pasta

1 tablespoon olive oil

1 small yellow onion, diced

1 red bell pepper, diced

3 cloves garlic, minced

14.5 ounces diced tomatoes

2 cups chicken broth

1 cup heavy cream

1 teaspoon Cajun seasoning

1/2 teaspoon smoked paprika

1/4 teaspoon black pepper

1/2 teaspoon salt

1 cup parmesan cheese, shredded

2 tablespoons fresh parsley, chopped


Instructions

1. Heat olive oil in a large deep skillet over medium heat and cook the sliced andouille sausage until browned.

2. Add diced onion and red bell pepper, then cook until softened.

3. Stir in minced garlic and cook for 30 seconds.

4. Pour in diced tomatoes, chicken broth, and heavy cream.

5. Add Cajun seasoning, smoked paprika, black pepper, and salt, then stir well.

6. Stir in the dry cavatappi pasta and bring the mixture to a gentle boil.

7. Reduce heat, cover, and simmer for 12 to 15 minutes, stirring occasionally, until the pasta is tender.

8. Remove from heat and stir in parmesan cheese until melted and creamy.

9. Sprinkle with fresh parsley and serve hot.

Notes

Use a deep skillet so the pasta has enough room to cook evenly in the sauce.

Stir every few minutes while simmering so the pasta does not stick to the bottom.

Add a splash of broth or cream when reheating leftovers to bring back the creamy texture.
