Description

This quick no-bake dessert is packed with crunchy peanuts, soft marshmallows, and a smooth chocolate coating for an easy sweet treat everyone will love. It is one of those easy recipe ideas that works as a healthy-ish snack, holiday candy, party dessert, and fun food idea whenever you need a simple homemade treat fast.


Ingredients

2 cups salted dry-roasted peanuts

2 cups mini marshmallows

2 cups semi-sweet chocolate chips

1 tablespoon coconut oil or butter

1/2 cup creamy peanut butter, optional

1 pinch flaky sea salt, optional


Instructions

1. Line a tray or baking sheet with parchment paper or wax paper.

2. Add the chocolate chips and coconut oil or butter to a microwave-safe bowl.

3. Microwave in 20-second intervals, stirring each time, until the chocolate is fully melted and smooth.

4. Stir in the peanut butter if using.

5. Add the peanuts and mix until they are well coated in chocolate.

6. Let the mixture cool for 1 to 2 minutes.

7. Fold in the mini marshmallows gently so they keep their shape.

8. Scoop spoonfuls of the mixture onto the lined tray to form clusters.

9. Sprinkle with flaky sea salt if desired.

10. Chill the clusters in the refrigerator for 20 to 30 minutes, or until firm.

11. Serve chilled or at cool room temperature.

Notes

Let the melted chocolate cool slightly before adding the marshmallows so they do not melt too much.

Use a small cookie scoop for evenly sized clusters.

Store the clusters in the fridge so the chocolate stays firm and the texture stays fresh.
