Ingredients

Instructions
1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, pumpkin pie spice, and cinnamon.
3. In a large bowl, beat the softened butter, brown sugar, and 1/2 cup granulated sugar until light and creamy.
4. Mix in the pumpkin puree, egg yolk, and vanilla extract until smooth and fully combined.
5. Add the dry ingredients to the wet ingredients and mix just until a soft dough forms.
6. Cover the dough and chill for 30 to 45 minutes.
7. In a small bowl, stir together the remaining 1/4 cup granulated sugar and 1 teaspoon cinnamon.

9. Arrange the dough balls on the prepared baking sheets, leaving space between each cookie.

Notes
For thicker cookies, chill the dough the full 45 minutes before baking.
Use pure pumpkin puree, not pumpkin pie filling, for the right texture and flavor.
