Ingredients
3 cups cooked chicken, chopped or shredded
4 cups broccoli florets, lightly steamed
2 cans cream of chicken soup
1 cup sour cream
1/2 cup mayonnaise
1 1/2 cups shredded cheddar cheese
1/4 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon black pepper
1/4 teaspoon salt
1 cup buttery crackers, crushed
1/3 cup sliced almonds
3 tablespoons butter, melted
Instructions
1. Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.
2. Steam the broccoli until just tender, then drain it well.
3. Spread the broccoli evenly in the prepared baking dish and top with the cooked chicken.
4. In a large bowl, mix the cream of chicken soup, sour cream, mayonnaise, garlic powder, onion powder, black pepper, salt, and 3/4 cup of the cheddar cheese until smooth.
5. Spoon the sauce over the chicken and broccoli and spread it evenly.
6. Sprinkle the remaining cheddar cheese and the Parmesan cheese over the top.
7. In a small bowl, mix the crushed crackers, sliced almonds, and melted butter.
8. Sprinkle the topping evenly over the casserole.
9. Bake for 25 to 30 minutes, until hot and bubbly and the topping is golden brown.
10. Let it rest for 5 minutes before serving.
Notes
Use rotisserie chicken to make this casserole even faster on busy nights.
Drain the broccoli very well so the sauce stays thick and creamy.
