Ingredients
2 pounds boneless skinless chicken thighs or chicken breasts, cut into chunks
2 tablespoons olive oil
1 packet ranch seasoning mix
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
4 tablespoons butter, melted
3 cloves garlic, minced
1/2 cup grated Parmesan cheese
2 tablespoons fresh parsley, chopped
8 skewers
Instructions
1. Soak wooden skewers in water for 20 to 30 minutes if using wooden skewers.
2. In a large bowl, toss the chicken with olive oil, ranch seasoning mix, garlic powder, paprika, salt, and black pepper until evenly coated.
3. Thread the seasoned chicken pieces onto the skewers.
4. Grill over medium-high heat or bake at 425°F, turning as needed, until the chicken is cooked through and reaches 165°F internally, about 15 to 20 minutes.
5. In a small bowl, stir together the melted butter, minced garlic, grated Parmesan cheese, and chopped parsley.
6. Brush the hot cooked skewers generously with the garlic Parmesan butter mixture.
7. Sprinkle with extra Parmesan and parsley if desired, then serve warm.
Notes
Chicken thighs stay extra juicy, but chicken breasts also work well if cut evenly.
Brush the garlic Parmesan butter on while the skewers are hot so the flavor melts right into the chicken.
For extra color and crisp edges, broil the skewers for 1 to 2 minutes after baking.
