Description

These Ranger Cookies are a quick dessert packed with oats, coconut, and chocolate chips for the perfect chewy and crispy bite. They are an easy recipe for dessert lovers, holiday baking, snack ideas, and homemade food ideas when you want simple cookies with big texture and cozy flavor.


Ingredients

2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup unsalted butter, softened

1 cup brown sugar

1 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 cups old-fashioned rolled oats

1 cup sweetened shredded coconut

1 1/2 cups semisweet chocolate chips


Instructions

1. Preheat the oven to 350°F and line two baking sheets with parchment paper.

2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

3. In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy.

4. Add the eggs one at a time, then mix in the vanilla extract.

5. Gradually stir the dry ingredients into the wet mixture until just combined.

6. Fold in the oats, shredded coconut, and chocolate chips.

7. Scoop rounded portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.

8. Bake for 10 to 12 minutes, until the edges are golden brown and the centers are just set.

9. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use softened butter, not melted butter, so the cookies hold their shape better.

Do not overbake the cookies if you want soft, chewy centers.

Let the cookies cool on the pan first so they finish setting without breaking apart.
