Step 1: Season the Chicken

  • 4 chicken drumsticks
  • 2 chicken thighs
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp oregano
  • 0.5 tsp black pepper

I like to pat the chicken pieces dry with paper towels first, because moisture is the enemy of crispy skin.
