Ingredients
1 zucchini, sliced into half-moons
1 red bell pepper, chopped
1 yellow squash, sliced
1/2 red onion, cut into wedges
1 cup broccoli florets
1/2 cup grape tomatoes
1 1/2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon dried herbs (such as thyme or Italian seasoning)
Instructions
- Wash and dry all vegetables.
- Chop zucchini, squash, and peppers; cut red onion into wedges; break broccoli into florets; leave grape tomatoes whole.
- In a large bowl, combine vegetables with olive oil, salt, pepper, and herbs. Toss to coat evenly.
- Preheat air fryer to 390°F (200°C) for 3 minutes.
- Place vegetables in a single layer in the air fryer basket.
