- 1 avocado, sliced
- 1 cup cherry tomatoes, halved

Step 1: Prepare and Season the Salmon
- 2 salmon fillets, cubed
- 1 tbsp olive oil
- 1 tsp paprika

I always start by cutting my salmon into bite-sized cubes, which helps them cook evenly and makes the bowl so much easier to eat without needing to cut through a large fillet.
Then I toss everything together in a bowl with the olive oil, paprika, garlic powder, black pepper, salt, and lemon juice.
I find that letting the salmon sit in the seasoning for about 5 minutes really helps the flavors soak in.
Step 2: Sear the Salmon Until Golden

Heat a skillet over medium-high heat and add the seasoned salmon directly to it.
I cook it for about 3-4 minutes on each side until the outside gets that beautiful golden crust and the inside is cooked through but still tender.
Don’t overcrowd the pan or move the salmon around too much, because that golden crust is where all the flavor lives.
Step 3: Boil the Eggs

I always boil my eggs in advance, which you can do the night before if you’re meal prepping.
Bring a pot of water to a boil, gently add your eggs, and cook for about 10 minutes for a soft, jammy yolk like the ones in the photo.
Transfer them to an ice bath immediately to stop the cooking and make them easier to peel.
Step 4: Prepare the Fresh Vegetables
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- 1 cup mushrooms, sliced
While your salmon is cooking, I slice the avocado lengthwise around the pit, twist it open, and scoop the flesh out with a spoon onto a cutting board.
I slice it into nice pieces, then halve the cherry tomatoes and slice the mushrooms thin.
I like to prep everything while the salmon is still going so the bowl comes together quickly.
Step 5: Make the Arugula Base

- Mushroom slices from Step 4

I pile the dressed arugula into a bowl, then arrange the salmon, eggs, avocado, tomatoes, and mushrooms around it in a way that looks pretty but also makes it easy to get a bite of everything.
I like to place the golden salmon pieces front and center so they’re the star of the show, then nestle the egg halves nearby so the yolk is visible.
Finish with a scatter of fresh chopped parsley on top, which adds brightness and that final pop of color.

Storage Instructions
Store: Keep your components in separate containers in the refrigerator for up to 3 days. Store the arugula and dressing separately from everything else to prevent it from getting soggy. When you’re ready to eat, simply assemble and enjoy.
Freeze: I don’t recommend freezing this bowl since the fresh vegetables and avocado don’t hold up well to freezing. However, you can cook the salmon in advance and freeze it for up to 2 months in an airtight container.
Reheat: If you’re reheating leftover salmon, use a gentle hand and warm it in a 300-degree oven for about 5 minutes just until it’s warm through. Reheating in the microwave can dry it out, so I avoid that whenever possible.
