Ingredients
2 sheets puff pastry, thawed
2 tablespoons butter
1 tablespoon olive oil
1 small yellow onion, finely diced
2 cloves garlic, minced
1 cup mushrooms, finely chopped
2 cups cooked chicken, shredded
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1/2 teaspoon dried parsley
1/4 teaspoon smoked paprika
3 ounces cream cheese, softened
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
2 tablespoons heavy cream
1 large egg
1 tablespoon water
1 tablespoon sesame seeds, optional
Instructions
1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
2. Heat the butter and olive oil in a skillet over medium heat.
3. Add the onion and cook for 3 to 4 minutes until softened.
4. Stir in the garlic and mushrooms, then cook until the mushrooms release their moisture and the mixture is fragrant.
5. Add the shredded chicken, salt, black pepper, thyme, parsley, and smoked paprika. Stir well.
6. Lower the heat and mix in the cream cheese, mozzarella, Parmesan, and heavy cream until the filling is creamy and fully combined.
7. Remove the filling from the heat and let it cool for 10 to 15 minutes.
8. Lightly roll out the puff pastry sheets and cut them into equal circles.
9. Spoon filling onto half of the pastry circles, leaving a border around the edges.
10. Top with the remaining pastry circles and seal the edges with a fork.
11. Cut small vents in the tops of the pies.
12. Whisk the egg with the water and brush the tops with the egg wash.
13. Sprinkle with sesame seeds if using.
14. Bake for 18 to 22 minutes until puffed and deeply golden brown.
15. Let the pies rest for 5 minutes before serving.
Notes
Use cooled filling so the puff pastry stays flaky and does not become soggy.
Do not overfill the pies or the edges may open while baking.
For the best golden finish, brush the tops well with egg wash right before baking.
