A colorful, nutrient-packed breakfast that brings together creamy scrambled eggs, sautéed mushrooms, crisp broccoli, and buttery avocado for a balanced and satisfying start to your day.


Ingredients

3 large eggs

1/2 cup broccoli florets

1/2 avocado, sliced

1/3 cup cremini mushrooms, sliced

1 tablespoon butter or olive oil (plus extra if needed)

Salt, to taste

Black pepper, to taste


Instructions

  1. Prepare the vegetables: Wash and chop broccoli into florets. Clean and slice mushrooms. Halve and slice the avocado.
  2. Cook mushrooms: In a non-stick pan over medium heat, heat 1/2 tablespoon butter or oil. Add mushrooms and cook for 5–7 minutes until browned. Set aside.
  3. Steam or sauté broccoli: Lightly steam broccoli for 3–5 minutes or sauté in the same pan until crisp-tender. Set aside.
  4. Scramble the eggs: Whisk eggs in a bowl with a pinch of salt and pepper. In a clean pan, melt remaining butter over low heat. Pour in eggs and gently stir with a spatula until soft curds form. Remove from heat slightly before fully cooked.
  5. Assemble: Plate scrambled eggs, top with sautéed mushrooms, steamed broccoli, and sliced avocado. Finish with a crack of black pepper.
