A luxurious twist on a comfort food favorite, this Seafood Lasagna Creamy Cheese features layers of tender pasta, rich white sauce, and a trio of shrimp, scallops, and crab meat. Creamy ricotta, gooey mozzarella, and nutty Parmesan finish it off with golden, bubbly perfection.
Ingredients
9 lasagna noodles
1/2 lb shrimp, peeled and deveined
1/2 lb scallops, cleaned
1/2 lb crab meat (or imitation)
3 tbsp butter (divided)
3 cloves garlic, minced
3 tbsp all-purpose flour
2 cups whole milk
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 cups shredded mozzarella cheese
1 1/2 cups ricotta cheese
2 tbsp chopped fresh parsley
Salt and pepper to taste
Instructions
- In a skillet, melt 1 tbsp butter over medium heat. Add garlic and cook until fragrant. Add shrimp and scallops and cook until just opaque. Stir in crab meat. Remove from heat.
- In a saucepan, melt remaining 2 tbsp butter. Whisk in flour and cook for 1 minute. Gradually whisk in milk and cream. Stir until thickened.
- Stir in Parmesan cheese, salt, and pepper. Add the seafood mixture and set aside.
- Cook lasagna noodles according to package directions. Drain and lay flat.
- Preheat oven to 375°F (190°C). In a greased 9×13 baking dish, spread a little seafood sauce. Add a layer of noodles, dollops of ricotta, seafood sauce, and mozzarella. Repeat layers.
- Top with remaining sauce, mozzarella, and extra Parmesan if desired.
- Cover with foil and bake 25 minutes. Remove foil and bake 15 more minutes until bubbly and golden.
- Let rest 10 minutes before serving. Garnish with fresh parsley.
