Ingredients
6 large sea scallops
1 teaspoon Cajun seasoning
1 tablespoon olive oil
2 tablespoons unsalted butter (divided)
2 garlic cloves, minced
1/4 cup chicken broth
1/2 cup heavy cream
Salt and pepper to taste
1 tablespoon chopped fresh parsley or chives (for garnish)
Instructions
1. Pat the sea scallops dry with paper towels and season with salt and pepper.
2. In a large skillet, heat olive oil and 1 tablespoon butter over medium-high heat.
3. Sear scallops undisturbed for 2–3 minutes per side until golden crust forms. Remove and set aside.
4. Lower heat to medium and melt remaining butter in the skillet. Add garlic and cook for 30 seconds until fragrant.
5. Stir in Cajun seasoning and toast it for another 30 seconds.
6. Pour in chicken broth and deglaze the pan, scraping up any brown bits.
7. Add heavy cream and stir well. Simmer 3–5 minutes until slightly thickened.
8. Return scallops to the pan and spoon sauce over to warm through.
9. Garnish with fresh parsley or chives and serve immediately.
Notes
Use dry-packed scallops to ensure a golden sear without excess water.
Avoid overcrowding the skillet when searing to get an even crust.
Adjust Cajun seasoning to your spice preference or use a homemade blend.
