Description

This shredded carrot and raisin salad is a quick side dish that tastes fresh, creamy, and naturally sweet in every bite. It is an easy recipe for holidays, lunch plates, cookouts, and light dinner ideas, made with crisp carrots, juicy raisins, and a simple creamy dressing that comes together in minutes.


Ingredients

4 cups shredded carrots

3/4 cup raisins

1/3 cup mayonnaise

1 tablespoon honey

1 tablespoon lemon juice

1/8 teaspoon salt

1/8 teaspoon black pepper

2 tablespoons sliced almonds

1 tablespoon chopped fresh mint


Instructions

1. Peel and shred the carrots, then place them in a large mixing bowl.

2. Add the raisins to the bowl with the carrots.

3. In a small bowl, whisk together the mayonnaise, honey, lemon juice, salt, and black pepper until smooth.

4. Pour the dressing over the carrots and raisins, then toss well until everything is evenly coated.

5. Cover and chill the salad in the refrigerator for 20 to 30 minutes.

6. Garnish with sliced almonds and fresh mint before serving, if desired.

Notes

Freshly shredded carrots give the best texture and flavor.

If the raisins are dry, soak them in warm water for 5 minutes, then drain well before mixing.

For extra crunch, add the sliced almonds right before serving.
