Ingredients
4 cups shredded carrots
3/4 cup raisins
1/3 cup mayonnaise
1 tablespoon honey
1 tablespoon lemon juice
1/8 teaspoon salt
1/8 teaspoon black pepper
2 tablespoons sliced almonds
1 tablespoon chopped fresh mint
Instructions
1. Peel and shred the carrots, then place them in a large mixing bowl.
2. Add the raisins to the bowl with the carrots.
3. In a small bowl, whisk together the mayonnaise, honey, lemon juice, salt, and black pepper until smooth.
4. Pour the dressing over the carrots and raisins, then toss well until everything is evenly coated.

Notes
