Ingredients

2 large eggs

2 teaspoons vanilla extract

1/2 cup whole milk

1/4 cup sour cream

1/3 cup rainbow jimmies sprinkles

1/2 cup unsalted butter, softened for frosting

2 cups powdered sugar

1 tablespoon heavy cream

1 teaspoon vanilla extract for frosting

1 pinch salt

2 tablespoons rainbow sprinkles for topping


Instructions

1. Preheat the oven to 350°F and line a 12-cup muffin pan with cupcake liners.

2. Whisk together the flour, baking powder, and salt in a medium bowl.

3. Beat the butter and sugar in a large bowl until light and fluffy.

4. Add the eggs one at a time, then mix in the vanilla extract.

5. Add the dry ingredients in two additions, alternating with the milk and sour cream, mixing just until combined.

6. Fold in the rainbow jimmies gently.

7. Divide the batter evenly among the liners, filling each about two-thirds full.

8. Bake for 16 to 19 minutes, or until a toothpick inserted in the center comes out clean.

10. Beat the frosting butter until creamy, then add powdered sugar, heavy cream, vanilla, and salt until smooth and fluffy.
