Step 1: Prepare and Fry the Potatoes
- 4 large potatoes, cut into fries

I like to cut my potatoes into consistent fries so they cook evenly. Heat your oil in a large skillet or deep pan over medium-high heat until it’s shimmering and hot. Once ready, carefully add the fries in a single layer and let them cook undisturbed for about 3-4 minutes on each side until golden and crispy.
I tend to work in batches if needed so I don’t overcrowd the pan. Season generously with salt and pepper right as they come out, while they’re still hot. Transfer to a paper towel-lined plate to drain excess oil.
Step 2: Cook the Spiced Beef

While the beef is simmering, I prepare the coleslaw in a separate bowl. Combine the shredded cabbage and julienned carrot together.
Drizzle with the vinegar and toss well so every strand gets coated. Season with a pinch of salt and pepper to taste.

Storage Instructions
Store: Keep any leftovers in an airtight container in the refrigerator for up to 3 days. The beef keeps well, though the fries are best enjoyed fresh. The coleslaw will stay crisp for several days if stored separately.
Freeze: The spiced beef can be frozen in an airtight container for up to 2 months. Fries don’t freeze well as they become mushy when thawed. The coleslaw is best not frozen.
Reheat: Warm the beef gently in a skillet over medium heat for about 3-5 minutes, adding a splash of water if needed. Crisp up leftover fries in the oven at 400°F for 8-10 minutes. Serve the coleslaw cold or at room temperature.
