Ingredients

1 cup yellow cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

1 tablespoon granulated sugar

1 teaspoon salt

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/4 teaspoon black pepper

2 large eggs

1 1/4 cups buttermilk

1/3 cup unsalted butter, melted

2 tablespoons vegetable oil

1 1/2 cups sharp cheddar cheese, shredded

2 fresh jalapeños, finely diced

2 tablespoons sliced green onions

extra sliced jalapeños for topping

hot honey for serving

sour cream for serving

Instructions

1. Preheat the waffle iron and lightly grease it with nonstick spray or oil.

2. In a large bowl, whisk together the cornmeal, flour, baking powder, sugar, salt, smoked paprika, garlic powder, and black pepper.

3. In a separate bowl, whisk together the eggs, buttermilk, melted butter, and vegetable oil until smooth.

4. Pour the wet ingredients into the dry ingredients and stir just until combined.

5. Fold in the shredded cheddar, diced jalapeños, and sliced green onions.

6. Scoop the batter into the hot waffle iron and spread lightly if needed.

Notes
