Ingredients
2 ribeye or New York strip steaks (1 to 1.5 inches thick)
Salt, to taste
Freshly ground black pepper, to taste
1 tablespoon olive oil or 1 tablespoon butter
2 garlic cloves, crushed
2 sprigs fresh thyme or rosemary
Optional: 2 tablespoons compound butter, for serving
Instructions
- Preheat your oven to 400°F (200°C).
- Pat steaks dry and season both sides with salt and pepper.
- Heat olive oil or butter in a cast iron skillet over medium-high heat.
- Sear steaks for 2 minutes per side.
- Add garlic and herbs to the pan.
- Transfer skillet to oven and roast for 5-7 minutes (medium-rare), or until preferred doneness.
- Remove steaks from oven and let rest for 5 minutes.
- Top with compound butter if desired and serve immediately.
