Ingredients
1 box strawberry cake mix
3 large eggs
1/2 cup vegetable oil
1 cup water
4 ounces cream cheese, softened
1 1/2 cups powdered sugar
1 teaspoon vanilla extract
16 ounces white chocolate or white melting wafers
1/4 cup pink candy melts
2 tablespoons freeze-dried strawberries, crushed
1 teaspoon coconut oil or vegetable shortening, optional
Instructions
1. Preheat the oven according to the cake mix package directions and prepare a 9×13-inch baking pan.
2. Mix the strawberry cake mix, eggs, vegetable oil, and water until smooth.
3. Bake the cake as directed on the package, then let it cool completely.
4. Crumble the cooled cake into fine crumbs in a large bowl.
5. In a separate bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
6. Add the cream cheese mixture to the cake crumbs and stir until fully combined.
7. Scoop and roll the mixture into small bite-sized balls.
8. Place the balls on a parchment-lined tray and chill for 30 minutes in the refrigerator or 15 minutes in the freezer.
9. Melt the white chocolate until smooth, adding coconut oil if needed for a thinner consistency.
10. Dip each chilled truffle bite into the white chocolate and place back on the tray.
11. Melt the pink candy melts and drizzle over the coated truffles.
12. Sprinkle the tops with crushed freeze-dried strawberries.
13. Let the truffles set completely before serving or storing.
Notes
Use fully cooled cake so the mixture does not turn sticky or too soft.
Chill the truffle centers well before dipping for a smoother coating.
Let the coating set fully before stacking or storing to keep the decorations neat.
