Ingredients

46 boneless, skinless chicken thighs (or breasts)

1/2 cup low-sodium soy sauce

1/3 cup honey

1/4 cup ketchup

1 tablespoon rice vinegar (or apple cider vinegar)

34 garlic cloves, minced

1 teaspoon ground black pepper

1/2 teaspoon crushed red pepper flakes (optional)

1 tablespoon cornstarch + 2 tablespoons water (for thickening)

Fresh chopped parsley or green onions for garnish (optional)


Instructions

  1. In a medium bowl, whisk together soy sauce, honey, ketchup, vinegar, garlic, black pepper, and red pepper flakes.
  2. Place chicken in the crockpot in a single layer.
  3. Pour the sauce over the chicken, coating it evenly.
  4. Cover and cook on low for 4–5 hours or on high for 2–3 hours.
  5. Mix cornstarch and water to form a slurry. Add to the crockpot during the last 20 minutes.
  6. Let the sauce thicken with the lid on.
  7. Garnish with parsley or green onions.
