Ingredients
4–6 boneless, skinless chicken thighs (or breasts)
1/2 cup low-sodium soy sauce
1/3 cup honey
1/4 cup ketchup
1 tablespoon rice vinegar (or apple cider vinegar)
3–4 garlic cloves, minced
1 teaspoon ground black pepper
1/2 teaspoon crushed red pepper flakes (optional)
1 tablespoon cornstarch + 2 tablespoons water (for thickening)
Fresh chopped parsley or green onions for garnish (optional)
Instructions
- In a medium bowl, whisk together soy sauce, honey, ketchup, vinegar, garlic, black pepper, and red pepper flakes.
- Place chicken in the crockpot in a single layer.
- Pour the sauce over the chicken, coating it evenly.
- Cover and cook on low for 4–5 hours or on high for 2–3 hours.
- Mix cornstarch and water to form a slurry. Add to the crockpot during the last 20 minutes.
