Description

Sweet Heart Jam Cookies are a beautiful easy recipe with buttery sugar cookies, a bright raspberry jam center, and a soft powdered sugar finish. Ingredients

2 1/2 cups all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1 cup unsalted butter, softened

3/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1/2 teaspoon almond extract

1/2 cup raspberry jam

1/4 cup powdered sugar


Instructions

1. In a medium bowl, whisk together the flour, baking powder, and salt.

2. In a large bowl, beat the softened butter and granulated sugar until light and fluffy.

3. Mix in the egg, vanilla extract, and almond extract until smooth.

4. Gradually add the dry ingredients and mix until a soft dough forms.

5. Divide the dough into two disks, wrap, and chill for 30 to 45 minutes.

6. Preheat the oven to 350°F and line baking sheets with parchment paper.

7. Roll out the dough to about 1/4 inch thick and cut heart shapes for both tops and bottoms.

8. Cut a smaller heart from the center of half of the cookies to create the top layer.

9. Bake for 8 to 10 minutes, until the edges are lightly golden, then cool completely.

10. Dust the cutout tops with powdered sugar.

11. Spread raspberry jam on each solid cookie and gently place the sugared tops over the jam.

12. Let the cookies settle for a few minutes, then serve or store.

Notes

Chill the dough well so the heart shapes stay neat while baking.

Dust the top cookies before assembling so the powdered sugar stays bright.

Do not overfill with jam or it may press out the sides.
