Ingredients

1 1/2 cups jasmine rice

1 cup full-fat coconut milk

1 1/4 cups water

1/2 teaspoon salt

1 teaspoon sugar

1 teaspoon coconut oil

1 tablespoon fresh lime juice

2 tablespoons chopped cilantro

1 tablespoon toasted coconut flakes

4 lime wedges


Instructions

1. Rinse the jasmine rice under cold water until the water runs mostly clear.

2. Add the coconut milk, water, salt, sugar, and coconut oil to a medium saucepan and stir to combine.

3. Stir in the rinsed rice and bring the mixture to a gentle simmer over medium heat.

4. Reduce the heat to low, cover the pot tightly, and cook for 15 to 18 minutes without lifting the lid.

5. Remove the pot from the heat and let the rice rest, covered, for 10 minutes.

6. Fluff the rice gently with a fork, then stir in the fresh lime juice.

7. Top with chopped cilantro, toasted coconut flakes, and serve with lime wedges.

Notes

Rinsing the rice well helps keep the grains fluffy instead of sticky.

Full-fat coconut milk gives the best rich texture and flavor.
