Ingredients
6 large flour tortillas
8 large eggs
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon butter
1 pound breakfast sausage
1 cup black beans, drained and rinsed
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/2 cup diced red bell pepper
1/3 cup diced onion
1/4 cup chopped cilantro
1/2 cup salsa or pico de gallo
1 avocado, diced
sour cream for serving
hot sauce for serving
Instructions
1. Cook the breakfast sausage in a large skillet over medium heat until browned and crumbly. Drain excess grease.
2. Add the diced onion and red bell pepper to the skillet and cook until slightly softened. Stir in the beans and heat through.
3. Whisk together the eggs, milk, salt, and black pepper in a bowl.
4. Melt the butter in a nonstick skillet over medium-low heat and scramble the eggs until soft and fluffy.
5. Warm the tortillas so they are soft and easy to fold.
6. Fill each tortilla with eggs, sausage, bean mixture, cheddar cheese, Monterey Jack cheese, salsa, avocado, and cilantro.
7. Fold in the sides and roll each tortilla tightly into a burrito.
8. Toast the burritos seam-side down in a skillet until golden on both sides, then serve warm with sour cream and hot sauce.
Notes
Let the hot filling cool for a minute before rolling so the tortillas stay intact and the burritos do not get soggy.
Warm the tortillas before filling to make them easier to fold without tearing.
