Ingredients
1 sheet puff pastry (or homemade galette dough)
3 medium heirloom tomatoes, thinly sliced
1 cup cherry tomatoes, halved
4 oz goat cheese, crumbled or softened
1 handful fresh basil leaves, torn
1 tablespoon olive oil
1 egg, beaten (for egg wash)
½ teaspoon salt
¼ teaspoon freshly ground black pepper
Instructions
1. Let the puff pastry come to room temperature, then roll it out into a 12-inch circle on a floured surface. Transfer to a parchment-lined baking sheet.
2. Arrange tomato slices and cherry tomato halves in a circular pattern, leaving a 2-inch border from the edge.
3. Dot crumbled goat cheese evenly over the tomatoes.
4. Season with salt and pepper, then drizzle with olive oil.
5. Fold the edges of the pastry over the filling, pleating to create a rustic edge.
6. Brush the crust with beaten egg for a golden finish.
7. Bake at 400°F (200°C) for 35–40 minutes until the crust is deep golden and tomatoes are tender and blistered.
8. Cool for 10 minutes, top with torn basil, slice, and serve.
Notes
Pat tomatoes dry before layering to avoid soggy crust.
For richer flavor, use an all-butter puff pastry.
To prep ahead, assemble and freeze unbaked galette, then bake directly from frozen.
