Ingredients
2 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup mayonnaise
1/4 cup sour cream
1/4 cup chopped green onions
2 tablespoons finely diced tomato
1 tablespoon chopped fresh parsley
1 teaspoon lemon juice
1 pinch salt
1 pinch black pepper
4 sandwich buns or sturdy rolls
8 slices cooked bacon
1 avocado, sliced
1 large tomato, sliced
1/2 small red onion, thinly sliced
12 pickle slices
1 cup shredded lettuce or chopped romaine
1 tablespoon butter, optional for toasting buns
Instructions
1. In a small bowl, mix the mayonnaise, sour cream, chopped green onions, diced tomato, parsley, lemon juice, pinch of salt, and pinch of black pepper until smooth. Chill until ready to use.
2. Pat the chicken breasts dry and drizzle with olive oil. Season both sides with paprika, garlic powder, onion powder, salt, and black pepper.
3. Heat a skillet over medium heat and cook the chicken for 5 to 7 minutes per side, or until golden and fully cooked through. Rest for 5 minutes, then slice.
4. Cook the bacon until crisp and set it aside on paper towels. Slice the avocado, tomato, and red onion, and prepare the lettuce and pickles.
5. Slice the buns and lightly butter the cut sides if desired. Toast until lightly golden.
6. Spread the creamy mixture on the bottom half of each bun. Layer with lettuce, sliced chicken, bacon, tomato, red onion, avocado, and pickles.
7. Add a little more spread to the top bun if desired, close the sandwiches, and serve immediately.
Notes
Use evenly sized chicken breasts or pound them lightly so they cook at the same rate.
Toast the buns to help hold the creamy spread and juicy toppings without getting soggy.
Assemble just before serving for the best texture and freshest flavor.
