Ingredients

For the Chicken
  • 4 chicken drumsticks
  • 2 tbsp flour
  • 1 cup breadcrumbs
  • 2 eggs beaten
  • 1 tbsp garlic powder
  • 1 tbsp paprika
  • 1 tsp onion powder
  • 1 tsp black pepper
  • 1 tsp salt
  • Oil for frying
For the Fries
  • 3 large potatoes cut into thick fries
  • Oil for frying
For the Coleslaw
  • 2 cups coleslaw mix
  • 1/2 cup mayonnaise
  • 1 tbsp apple cider vinegar
For Serving
  • 1/2 cup ketchup

Method

Instructions
  1. Combine the coleslaw mix with mayonnaise and apple cider vinegar in a large bowl. Mix gently so the vegetables stay crisp but get coated in the creamy dressing. Let it sit for a few minutes so the flavors meld together.
  2. Combine the flour, breadcrumbs, garlic powder, paprika, onion powder, black pepper, and salt in a shallow dish. Beat the eggs in a separate shallow bowl. This two-step coating system creates that extra crunch.
  3. Dip each drumstick into the beaten eggs, then roll it in the breadcrumb mixture, pressing gently. Heat oil in a deep skillet to 350 degrees Fahrenheit. Carefully place the coated drumsticks in the hot oil and fry for 12-15 minutes, turning occasionally, until deep golden brown. Remove and drain on paper towels.
  4. Cut potatoes into thick, chunky fries and pat dry with paper towels. Fry in the same oil for 8-10 minutes, stirring occasionally, until golden and crispy. Drain on paper towels and sprinkle with salt.
  5. Arrange the coleslaw on one side of a takeout box. Pile the hot, crispy fries on the other side. Nestle the golden fried chicken drumsticks in the center. Add ketchup in a small cup in the box.

Notes

For extra crispy chicken, make sure your oil is at the correct temperature. A meat thermometer inserted into the thickest part of the drumstick should read 165 degrees Fahrenheit. You can prepare the coleslaw and coating mixture up to 4 hours ahead of time. Fry everything fresh right before serving for the best texture and taste.
