- Cut your potatoes into even-sized fries and pat them dry with paper towels to ensure crispiness. Heat your vegetable oil to 350°F (175°C) in a deep pan or fryer. Work in batches to avoid overcrowding, then fry until golden brown, about 8-10 minutes. Drain on paper towels and set aside.
- Pat your steak cubes dry with paper towels, then season generously on all sides with salt, black pepper, paprika, and dried parsley. Season about 5 minutes before cooking so the flavors penetrate the meat. Make sure every piece is coated evenly.
- Heat a large skillet over high heat until it's smoking, preferably cast iron or heavy-bottomed. Add olive oil, then carefully place the steak bites in a single layer. Don't move them around, let them sear for 2-3 minutes per side until you get a deep golden brown crust. Work in batches if needed and transfer finished pieces to a plate.
- In the same skillet, reduce heat to medium and add butter. Once melted and foaming, add minced garlic and stir constantly for about 30-45 seconds until fragrant. Be careful not to let the garlic burn, you want golden and aromatic.
- Return all your seared steak bites to the skillet with the garlic butter sauce. Toss gently to coat everything, cooking for another 1-2 minutes so the flavors meld together. Taste and adjust seasoning if needed.
- Arrange your crispy fries on a serving plate and top generously with grated Parmesan cheese. The heat from the fries will slightly melt the cheese. Pile your garlic butter steak bites on top or alongside the fries and serve immediately.
