- Cut the sirloin into roughly one-inch cubes. Pat them completely dry with paper towels. Season every piece generously with salt, black pepper, and paprika on all sides.
- Heat a large skillet over medium-high heat and add the olive oil. Once shimmering, carefully add the steak cubes in a single layer. Let them sit undisturbed for 2-3 minutes on each side to develop a golden crust. Work in batches if needed. Transfer the seared steak to a plate once browned on all sides.
- In the same skillet, reduce heat to medium and add the butter. Once melted, add minced garlic and stir constantly for about 30 seconds until fragrant. Return the steak bites to the pan and toss to coat in the garlic butter. Remove from heat and sprinkle with fresh parsley.
- While the steak is cooking, cut potatoes into fries about 1/4-inch wide. Toss them with olive oil and salt in a large bowl.
- Spread the fries in a single layer on a baking sheet with space between them. Bake at 425F for about 25-30 minutes, stirring halfway through, until golden and crispy.
- As soon as the fries come out of the oven, while still hot, toss them with grated Parmesan cheese. Serve immediately alongside the garlic butter steak bites.
