- Cut the sirloin into bite-sized cubes, roughly one and a half inches each. Generously season both sides with paprika, garlic powder, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat until shimmering. Working in batches, add steak cubes and sear for about two to three minutes per side until golden. Set aside on a clean plate.
- In the same skillet, reduce heat to medium and add minced garlic. Cook for about 30 seconds until fragrant. Add butter and let it melt completely, stirring constantly.
- Return all steak bites to the skillet and toss gently in the garlic butter sauce. Simmer for one minute, then top with fresh chopped parsley.
- Prepare fries according to package directions if frozen, or bake fresh-cut fries at 425 degrees Fahrenheit for about 25 to 30 minutes until golden and crispy. Sprinkle with garlic powder while hot.
- Transfer hot fries to a serving plate and immediately sprinkle mozzarella and cheddar cheese over the top. Finish with a light sprinkle of fresh parsley flakes.

Notes
For best results, use a very hot pan when searing the steak to develop a caramelized crust. Do not overcrowd the skillet when searing. The cheese-loaded fries are best enjoyed fresh, though leftovers can be reheated in a 375-degree oven for about 8-10 minutes.
