Ingredients
  

For the Chicken
  • 2 chicken breasts sliced
  • 2 garlic cloves minced
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste
For the Mashed Potatoes
  • 4 medium potatoes peeled and chopped
  • 2 tbsp butter
  • 1/2 cup milk
  • Salt and black pepper to taste
For the Tomato Salad
  • 2 tomatoes chopped
  • 1/2 onion thinly sliced
  • 1 tbsp olive oil
  • 1 tbsp fresh parsley chopped
  • Salt and black pepper to taste

Method
 

Instructions
  1. Bring a pot of salted water to a boil. Add peeled and chopped potatoes, and cook for 15 to 20 minutes until they are tender enough to pierce easily with a fork.
  2. While the potatoes cook, chop the tomatoes and thinly slice the onion. Toss them together in a bowl with olive oil, fresh parsley, salt, and pepper. Set aside to allow flavors to meld.
  3. Slice the chicken breasts into strips and mix them with minced garlic, paprika, Italian seasoning, salt, and pepper. Heat a large skillet over medium-high heat and cook the seasoned chicken for 10 to 12 minutes until golden brown and cooked through.
  4. Drain the cooked potatoes and return them to the pot. Add butter and milk, then mash until you reach your desired consistency. Taste and adjust salt and pepper as needed.
  5. Divide the mashed potatoes among four plates. Top with the cooked garlic chicken strips and serve alongside the fresh tomato salad.

Notes

For best texture, mash the potatoes until they have a few small lumps rather than perfectly smooth. Don't mash them too much or they can become gluey. The fresh tomato salad is best served immediately and should not be made more than a few hours ahead. You can add a splash more milk to the mashed potatoes when reheating if they seem dry.
