For the Chicken
  • 2 chicken breasts sliced into strips
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt and black pepper to taste
For the Meal
  • 4 cups French fries
  • 2 cups romaine lettuce chopped
  • 1 cup cherry tomatoes diced
  • 1/2 cup feta cheese crumbles
  • 2 green onions sliced
  • Optional: ranch or garlic dressing

Instructions
  1. Slice chicken breasts into thin strips and pat dry. Mix paprika, garlic powder, salt, and pepper in a small bowl. Drizzle chicken with olive oil and coat generously with the spice mixture. Let sit for 5 minutes while you preheat your grill.
  2. Heat grill or grill pan to medium-high heat and lightly oil the grates. Lay chicken strips on the grill and cook 4 to 5 minutes on the first side without moving them. Flip and cook another 4 to 5 minutes until internal temperature reaches 165°F. Rest for a few minutes before serving.
  3. Cook fries according to package directions, or bake at 400°F for 20 to 25 minutes until crispy. Season lightly with salt right out of the oven so the seasoning adheres to the hot fries.
  4. Chop romaine lettuce and place in a bowl. Add diced cherry tomatoes and sliced green onions. Scatter feta cheese crumbles on top and toss gently. For meals prepared ahead, keep components separate until serving to prevent wilting.
  5. Arrange chicken strips, warm fries, and fresh salad on a plate or in a bowl. Drizzle dressing over the salad or serve on the side. The contrast between warm and cool components makes this dish special.

Notes
