Ingredients
  

For the Chicken and Bowl
  • 2 chicken breasts
  • 2 cups cooked white rice
  • 1 avocado halved and sliced
  • Handful of lettuce leaves
  • 1 cup cherry tomatoes halved
  • 2 tbsp fresh parsley chopped
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and black pepper to taste
For the Creamy Herb Sauce
  • 1/2 cup Greek yogurt or sour cream
  • 1 tbsp lemon juice
  • 2 tbsp fresh parsley or cilantro finely chopped
  • 1 garlic clove minced
  • Salt and pepper to taste

Method
 

Instructions
  1. Pat chicken breasts dry and brush with olive oil. Season generously with garlic powder, paprika, salt, and black pepper. Heat grill to medium-high and cook chicken for 6-8 minutes per side until internal temperature reaches 165°F. Let rest for 5 minutes before slicing.
  2. Prepare rice according to package directions if not already cooked. Season lightly with salt while warm for better flavor. Allow rice to cool slightly before assembling bowls.
  3. Slice avocado lengthwise, remove pit, and slice into thin pieces. Chop lettuce into bite-sized pieces and halve cherry tomatoes. Chop fresh parsley and set aside.
  4. Whisk together Greek yogurt and lemon juice until smooth. Stir in minced garlic and fresh herbs. Season with salt and pepper to taste. Set aside.
  5. Place warm rice as the base in each bowl. Top with sliced chicken, lettuce, avocado slices, and halved tomatoes. Drizzle generously with creamy herb sauce and garnish with fresh parsley. Season with salt and pepper to taste. Serve immediately.

Notes
