- Cut potatoes into thick-cut fries. Heat oil in a deep pot or heavy skillet to medium-high heat. Test temperature with one fry first. Once golden in 3 to 4 minutes, add remaining fries in batches, avoiding crowding the pan.
- Whisk together soy sauce, honey, minced garlic, paprika, black pepper, and salt in a small bowl. Taste and adjust salt as needed.
- Cut steak into 1.5 to 2-inch cubes. Coat each cube thoroughly in the marinade and let sit for at least 5 minutes.
- Soak wooden skewers in water for at least 10 minutes. Thread marinated beef cubes onto skewers, spacing them apart. Fit 5 to 6 cubes per skewer.
- Heat a cast-iron skillet or grill pan to high heat with remaining olive oil. When oil shimmers, place skewers in pan and sear for 2 to 3 minutes per side. Rotate a quarter turn halfway through for even caramelization. Total cooking time is 10 to 12 minutes.
- While beef cooks, slice tomato and red onion. Wash lettuce. Keep vegetables separate on the serving plate.
- Arrange lettuce as the base, add golden fries on one side, place beef skewers in center, and tuck tomato slices and red onion around sides. Sprinkle fresh parsley on top.
