- Whisk together olive oil, minced garlic, paprika, garlic powder, onion powder, black pepper, salt, and honey in a small bowl until well combined.
- Pat the drumsticks dry and rub the marinade all over the chicken, coating every side generously. Let sit for at least 15 minutes, or up to 2 hours in the refrigerator.
- Slice potatoes into thick fries about half an inch wide. Soak in cold water for 10 minutes to remove excess starch.
- Heat oil to 350°F and fry potatoes in batches for 8 to 10 minutes until golden and crispy. Transfer to paper towel-lined plate and season with salt while hot.
- Heat grill to medium-high and lightly oil grates. Place drumsticks on grill and cook for 12 to 15 minutes per side, rotating occasionally for even cooking. Internal temperature should reach 165°F.
- Wash lettuce and arrange as the base in serving container. Slice cucumber and tomato into clean, even slices and thinly slice red onion. Arrange on top of lettuce.
- Arrange grilled drumsticks on top of salad. Pile crispy fries on one side and serve mayo-based dipping sauce in a small cup alongside. Serve immediately while hot.
