- Pat your steak dry with a paper towel. Mix together garlic powder, paprika, black pepper, and salt. Coat both sides of the steak generously with the seasoning mixture. Let it sit for a few minutes to allow the flavors to settle and the meat to relax.
- Heat a pan over medium-high heat until smoking slightly. Add olive oil and let it shimmer. Place the steak in the pan and resist moving it for 4-5 minutes until a deep brown crust forms. Flip and cook the other side for 3-4 minutes for medium-rare (add more time if you prefer it more cooked). Remove to a plate to rest.
- In the same pan with the steak drippings, add butter and let it foam. Add onion rings and reduce heat to medium. Stir occasionally for 8-10 minutes until golden brown and soft. Season with a pinch of salt and pepper as they cook.
- Heat a separate non-stick pan over medium heat with a light coating of oil or butter. Crack eggs directly into the pan and season with salt and pepper. Cook until whites are set but yolks are still runny, about 4-5 minutes, for sunny-side up eggs.
- Cut avocado in half lengthwise and remove the pit. Scoop out the flesh and slice into wedges. Season with a tiny pinch of salt and pepper.
- Slice the rested steak and arrange on a plate. Add caramelized onions, fried eggs, and avocado slices. Serve immediately while everything is still warm.
