Step 1: Prepare the Steak

  • 1 lbs sirloin steak, cubed

Start by cutting your sirloin steak into bite-sized cubes, about 1 to 1.5 inches each. I like to trim any excess fat as I go, which keeps the final dish from becoming greasy. Pat the cubes dry with a paper towel before cooking, as this helps them develop a nice brown crust in the pan.

Step 2: Season and Brown the Steak

  • 2 tbsp olive oil
  • 1 tsp black pepper
  • 1 tsp paprika
  • Salt to taste

Heat the olive oil in a large skillet over medium-high heat until it shimmers. While the oil is heating, season your steak cubes generously with black pepper, paprika, and salt.

Once the oil is hot, add the steak in a single layer. I find it’s important not to overcrowd the pan, so if needed, work in batches. Let each piece sit undisturbed for 2 to 3 minutes to develop a golden brown crust, then stir and cook for another 2 to 3 minutes until browned on all sides.

Remove the cooked steak to a clean plate and set aside.

Step 3: Add Garlic and Soy Sauce

  • 3 garlic cloves, minced
  • 1 tbsp soy sauce

In the same skillet with the remaining oil and browned bits, add your minced garlic. I stir constantly for about 30 seconds to 1 minute until the garlic becomes fragrant but not burnt.

Step 6: Cook the French Fries

  • 1 bag frozen French fries or homemade fries
  • Salt to taste for fries

While the steak and vegetables are cooking, prepare your French fries according to package instructions. I tend to cook them simultaneously with the steak for timing convenience, but you can also finish them just before serving.

Season the fries with salt immediately after cooking while they’re still hot and the salt will stick better. If using homemade fries, toss them with a bit of olive oil, salt, and black pepper before roasting at 400 degrees Fahrenheit for about 20 to 25 minutes until golden and crispy.

Store: Keep leftover steak and vegetables in an airtight container in the refrigerator for up to 3 days. Store fries separately as they tend to get soggy when combined with the moisture from the vegetables.
