- Cut your sirloin steak into bite-sized cubes, about 1 to 1.5 inches each. Trim any excess fat and pat the cubes dry with a paper towel to help them develop a nice brown crust in the pan.
- Heat the olive oil in a large skillet over medium-high heat until it shimmers. Season the steak cubes with black pepper, paprika, and salt. Add the steak in a single layer and let each piece sit undisturbed for 2 to 3 minutes to develop a golden brown crust, then stir and cook for another 2 to 3 minutes. Remove to a clean plate.
- In the same skillet, add the minced garlic and stir constantly for about 30 seconds to 1 minute until fragrant. Pour in the soy sauce and stir well, scraping up any flavorful browned bits from the bottom of the pan.
- Add all the sliced bell peppers and onion to the skillet. Toss everything together and cook for 5 to 7 minutes, stirring occasionally, until the vegetables are tender-crisp and have started to caramelize slightly.
- Return the cooked steak cubes to the skillet with the vegetables. Stir everything together and let it heat through for about 1 to 2 minutes. Taste and adjust seasonings with additional salt and pepper if needed.
- While the steak and vegetables are cooking, prepare your French fries according to package instructions. Season the fries with salt immediately after cooking while they're still hot. If using homemade fries, toss with olive oil, salt, and black pepper before roasting at 400 degrees Fahrenheit for about 20 to 25 minutes until golden and crispy.

Notes
Pat the steak dry before cooking for a better crust. Don't overcrowd the pan when browning the meat. The vegetables should still have a bit of bite to them, not be completely soft. Store fries separately from the steak and vegetables as they can get soggy when combined with moisture.
