Description

This Korean Ground Beef Bowl brings sweet and savory flavors together in a hearty, customizable rice bowl. Juicy ground beef is glazed in soy, garlic, and brown sugar, then topped with fresh cucumber, kimchi, and a sunny-side-up egg for a quick, satisfying meal that’s easy to meal-prep or serve hot right away.


Ingredients

1 pound ground beef

3 tablespoons soy sauce

2 tablespoons brown sugar

2 cloves garlic, minced

1 teaspoon fresh grated ginger

1 teaspoon sesame oil

2 green onions, chopped

2 cups cooked jasmine rice

2 large eggs (for frying)

1 small cucumber, sliced

¼ cup kimchi (optional)

1 teaspoon sesame seeds


Instructions

1. Heat a skillet over medium-high heat. Add ground beef and cook, breaking it up as it browns, about 6–8 minutes. Drain excess grease.

2. Add minced garlic and grated ginger to the beef. Cook for 1–2 minutes until fragrant.

3. Stir in soy sauce and brown sugar. Simmer for 2–3 minutes until the sauce thickens and coats the beef.

4. Remove from heat and stir in sesame oil and chopped green onions.

5. Divide the cooked rice into bowls. Top with the beef mixture, cucumber slices, and kimchi (if using).

6. Fry eggs sunny-side up and place one on each bowl.

7. Garnish with sesame seeds. Serve immediately with optional sriracha or gochujang for heat.

Notes

Cook the egg last so the yolk stays runny and fresh when served over the warm beef and rice.

Use lean ground beef to reduce the need for draining and avoid greasy results.

Double the beef mixture and freeze half for a future quick dinner—just reheat and serve.
