  • 3 cups French fries
  • 2 tbsp olive oil

  • 1 tbsp fresh parsley, chopped
  • 1 small red chili, finely chopped

Step 1: Cook Your French Fries

  • 3 cups French fries

I like to start with the fries since they take the most time and need to be hot when everything else comes together. I prepare them according to package directions, whether that’s air frying, deep frying, or baking. The goal is golden, crispy, and hot, so timing matters here.

Step 2: Prepare and Season Your Steak Bites

  • 1 lb beef steak, cut into cubes
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp black pepper

While the fries cook, I cube my beef steak into bite-sized pieces, roughly three-quarters of an inch each. I season them generously with paprika, salt, and black pepper, making sure every piece gets coated evenly.

Step 3: Sear the Steak Bites

  • 2 tbsp olive oil
  • Seasoned steak bites from Step 2

I heat the olive oil in a large skillet over medium-high heat until it shimmers. Once it’s hot, I add the steak bites in a single layer and let them sear for about 3 to 4 minutes without moving them. I find this creates a beautiful brown crust, which is where all the flavor comes from.

I flip them and sear the other sides for another 2 to 3 minutes until cooked to medium or medium-rare, depending on how thick the cubes are. Then I transfer them to a plate.

Step 4: Make the Herb and Chili Topping

  • 2 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1 small red chili, finely chopped

In the same skillet, I add the minced garlic and cook it for just about 30 seconds until fragrant. I tend to watch closely so it doesn’t burn, which can happen quickly. I remove it from heat and stir in the fresh parsley and finely chopped red chili.

I toss the cooked steak bites back into this mixture, coating them evenly in the herby, spicy topping. This is what gives the plate its signature look and brightness.

Step 5: Cook Your Eggs

  • 2 eggs
  • 1 tbsp butter

I melt butter in a nonstick skillet over medium heat. Once it’s foaming, I carefully crack both eggs into the pan, keeping the yolks intact. I cook them sunny-side-up for about 4 to 5 minutes until the whites are set but the yolks are still runny.

Step 6: Assemble Your Plate

  • Cooked steak bites with herb topping from Step 4
  • Hot French fries from Step 1
  • Cooked eggs from Step 5

I arrange everything on a warm plate. I place the herb-topped steak bites on one side, the crispy fries piled high, and the two sunny-side-up eggs on the other side. The runny yolk will blend beautifully with the steak and fries if you want it to.

Storage Instructions

Store: Keep leftovers in an airtight container in the refrigerator for up to 3 days. The steak bites will keep best when stored separately from the fries and eggs.

Freeze: I don’t recommend freezing this dish since the eggs become rubbery and the fries lose their texture. However, you can freeze cooked steak bites alone for up to 2 months.

Reheat: Warm the steak bites in a skillet over medium heat for 2 to 3 minutes. Reheat fries in a 375°F oven for about 5 minutes to restore crispiness. Always cook fresh eggs when you’re ready to eat.
