- Cut the sirloin steak into roughly 1-inch cubes. Combine paprika, garlic powder, salt, and pepper in a small bowl. Toss the steak cubes in the seasoning mixture until well coated. Let sit for a few minutes while you prep everything else.
- Wash and cut potatoes into fries about the thickness of a pinky finger. Heat vegetable oil in a deep pan to around 350 degrees Fahrenheit. Working in batches, fry the potatoes for 12 to 15 minutes until golden brown and crispy. Remove with a slotted spoon, place on paper towels, and season immediately with salt and paprika.
- Heat olive oil in a large skillet over medium-high heat until very hot. Add seasoned steak bites in a single layer. Let them sit for 2 to 3 minutes on each side to develop a golden crust, cooking for about 8 to 10 minutes total.
- Reduce heat to medium and add butter to the pan. Once melted and foaming, add minced garlic and stir constantly for about 30 seconds. Pour in Worcestershire sauce, sprinkle dried parsley, and stir for another 30 seconds until the sauce coats all the steak bites.
- Remove steak from heat and toss one final time to coat all pieces in garlic butter. Plate the steak bites on one side and pile crispy fries next to them. Drizzle any extra garlic butter sauce over the steak and garnish with fresh parsley. Serve immediately while hot.

Notes
Make sure the pan is very hot before adding steak to develop a proper crust. Cut fries to uniform thickness for even cooking. Don't overcrowd the pan when frying potatoes. Store steak and fries separately to keep fries crispy. For best results, use quality sirloin steak cut into even-sized cubes.
